Coconut Beef Curry (slow cooked)

Ingredients:

 

2x 400g beef stewing steak, cut into 1.5-inch cubes
1 can (14 oz) coconut milk
1 large onion, finely chopped
3 cloves garlic, minced
1-inch piece of fresh ginger, grated
2 tbsp curry powder
1 tbsp garam masala
1 tsp turmeric
1 tsp paprika
1 tsp chili flakes (optional, I used two chopped chillies)

1 tsp ground cumin
1 tbsp tomato paste
2 cups beef broth
2 tbsp vegetable oil
Salt and black pepper, to taste
Cooked basmati rice, for serving
Garlic naan bread, for serving
Crispy fries, for serving
Fresh cilantro, chopped (for garnish)

 

Method:

  1. Heat vegetable oil in a skillet over medium heat. Sauté chopped onions until soft and golden, about 5 minutes.
  2. Add garlic and ginger; cook for another 1–2 minutes until fragrant. Stir in curry powder, garam masala, turmeric, paprika, chili flakes, and cumin. Cook for 1 more minute.
  3. Stir in tomato paste and mix well. Add this entire mixture into your slow cooker.
  4. Add the cubed beef, coconut milk, and beef broth. Season with salt and pepper. Stir to coat the beef thoroughly in the sauce.
  5. Cover and cook on low for 8 hours or on high for 4–5 hours, until beef is fork-tender and the curry has thickened slightly.
  6. Taste and adjust seasoning if needed.
Serve over a bed of basmati rice with garlic naan and fries on the side. Garnish with chopped cilantro.
