Coconut Beef Curry (slow cooked) |

Method:
- Heat vegetable oil in a skillet over medium heat. Sauté chopped onions until soft and golden, about 5 minutes.
- Add garlic and ginger; cook for another 1–2 minutes until fragrant. Stir in curry powder, garam masala, turmeric, paprika, chili flakes, and cumin. Cook for 1 more minute.
- Stir in tomato paste and mix well. Add this entire mixture into your slow cooker.
- Add the cubed beef, coconut milk, and beef broth. Season with salt and pepper. Stir to coat the beef thoroughly in the sauce.
- Cover and cook on low for 8 hours or on high for 4–5 hours, until beef is fork-tender and the curry has thickened slightly.
- Taste and adjust seasoning if needed.
Serve over a bed of basmati rice with garlic naan and fries on the side. Garnish with chopped cilantro.
