Mushroom soup

Ingredients:

  • 500g Chustnut mushrooms finely chopped
  • 1 large onion finely chopped 
  • 2 garlic cloves crush or grate
  • dash of Marsala
  • 300ml Veg stock
  • 150ml Double cream
  • 1tbsp Tarragon chopped
  • 1tsp black pepper corns ground

Method:

In a carasole, or large saucepan, cook the onions and garlic with a little butter for 5 minutes till soft

Add the mushroom and cook until them melt

Add dash of Masala and cook down

Add tarragon, stock and cream and simmer for 10 minutes

Should make 3 or 4  portions. (1.5 cups per serving)
