Pad Thai with King Prawns

Ingredients:

  • 175g flat rice noodles
  • sunflower oil
  • handful of large raw prawns
  • 2 garlic cloves, sliced
  • ½ red chilli, deseeded and sliced
  • 2 medium eggs
  • 3tbsp fish sauce
  • Juice of 1 lime
  • 1tbsp light muscovado sugar
  • 4tbsp roasted, salted peanuts
  • 6 spring onions, sliced on the diagonal
  • 50g beansprouts

Method:

Cook the noodles acording to the pack instructions
Drain and toss in ½tbsp sunflower oil

Heat the rest of the oil (about 3tbsp) in a large deep frying pan or wok
Add the prawns and stir fry for 1½ min
Add the garlic and chilli and cook for a further 30sec

Add the beaten eggs (optional) and stir fry for a few seconds until they look scrambled
Lower the heat and add the noodles, fish saice, lime juice and sugar
Toss together for 1min until the noodles are hot
Add the peanuts, bean sprouts and spring onions, toss together for 1min and serve
