Salmon and Potato Pie

Ingredients:

4 large Maris Piper potatoes
2 fillets of salmon
50g butter
284ml single cream
1tbsp horseradish sauce
1tbsp wholegrain mustard
Handful of chopped parsley

Method:

Bring a pan of water to the boil, peel and cut the potatoes into ½ cm slices and par boil for 5 min
Put the butter and cream into a pan and heat gently. Take off the heat and add the horseradish and mustard
Put a layer of potatoes in a roasting dish, season with salt & pepper then sprinkle with chopped parsley
Add a layer of salmon, followed with another layer of potatoes, salt, pepper and parsley etc until full. Finish with a layer of potato
Pour over the cream mixture and season the top
Bake for 50min at 180°c
