Method:
Pulled Pork:
- In a large bowl, combine vinegar, Tabasco sauce and sugar with hot water. Stir till sugar is dissolved.
- Pour marinade over pork, cover and refrigerate for at least 12 hours.
- Preheat oven to 130°C , put the ribs curved side down for 1½hrs without marinade
- Take the ribs out, place them curved side up in foil, wrap into a parcel and put some marinade over and put back in the oven for another 1½hrs.
- When the time is up, unwrap the ribs, pour away the marinade and discard the foil. Put the ribs back on the tray and back in the oven for 15min to dry out. Generously brush with sauce and return to the oven for a further 30min. When this is done the meat should be incredibly tender and fall away from the bone. Sauce:
- Place all ingredients except the vegetable oil in a saucepan. Bring to a boil, stirring occasionally.
- When mixture has reached boiling stage, stir in vegetable oil till incorporated. Allow to simmer for 20 minutes, stirring occasionally.
- Remove from heat. Pour into proper storage container, and cool in an ice bath to 40°F
- Cover and refrigerate
