Ingredients:

Serves 2

2 Veal escallopes
Prosciutto ham
Gruyere cheese

1 can chopped tomatoes
1 onion chopped finely
Chorizo chopped finely
1 clove garlic crushed
Salt and pepper

Method:

Using a wooden mallet, flatten out the veal. (Put the veal in a larger freezer bag and beat the outside)

Cut veal into 3-4" squares and cover each peice with a slice of Prosciutto

Cut Gruyere into ¼" strips and roll veal/prosciutto around each piece and secure with cocktail stick

Brown the veal in butter over a medium flame and then tranfer to baking tray

Pre-heat oven to 180°C ready to heat up the veal

Add onion, garlic and chorizo to pan and simmer till soft

Add ½ glass of white wine and simmer to burn off som eof the alcohol

Add can of tomatoes and simmer for 15-20 minutes.

5 minutes before your ready to serve, put the veal in the oven
