Ingredients:

Meat

Pork Ribs cause they taste better

Lime to serve

Spice Rub

1 Onion
2 Garlic
1tsp Smoked Paprika
1tsp Mustard Powder
1tsp Chilli Powder
1tsp Cumin
1tsp Oregano
1tbsp Brown Sugar
1tbsp Salt

 

 

Braising Sauce

1 Cup Malted Vinegar
1 Cup Brown Sugar
½ Cup Bourbon
1 Onion diced
1 Tomato diced
2 tbsp Tomato sauce
1 tbsp Dijon Mustard
1tsp Cinnamon
1tsp Cumin
1tsp Chilli Powder
1tsp Smoked Paprika
1tsp Mustard Powder
2 Bay leaves
1tsp Salt
1 Orange Peal/Zest

Method:

Stage 1 – Rub the spice rub into ribs and leave in fridge for 3 hours

Stage 2 - Grill ribs for 3-4 minutes each side

Stage 3 - Bring braising sauce to the boil

Stage 4 - Serve with lime
