Venison Hunter Style

Ingredients:

  • 1½lbs venison (in steaks)
  • 1/4 cup butter
  • 4 portabello mushrooms
  • 1 onion
  • 1 cup red wine
  • 2 cloves garlic
  • ½ stock cube
  • 2 bay leaves

Method:

Brown the venison in butter

Saute the onion and garlic until soft; add the mushrooms until reduced

Add the stock, wine and season

Bring to the boil, then add the vension

Cover and simmer at 160°c for 1½hr, turning the venison occasionally

Remove from oven, take the venison out and wrap in foil, thicken the sauce with cornflour
