Chicken Old Delhi-Style Curry

Ingredients:

800g Chicken thigh fillets

1 teaspoon ginger paste
1 teaspoon garlic paste
1½ teaspoon salt
1½ teaspoon chilli powder
Juice of ½ a lemon

100g Greek yoghurt
¼ teaspoon garam masala

800g Tomatoes
2 garlic cloves
3½cm Ginger
2 Green Cardamoms
2 cloves
1 bay leaf
1 TABLEspoon chilli powder
50g Butter
5 TABLEspoon single cream
¼ teaspoon garam masala
2 teaspoon dried fenugreek
1 teaspoon salt

2 teaspoon sugar (optional)

Method:

Stage 1 – First marinade (use blender and then put in big mixing bowl)

Stage 2 – Second marinade

Stage 3 – Place chicken on roasting tray at 140/160C for 12-15 mins

Stage 3 – for the sauce – Simmer the following:

Stage 4 – Once the tomatoes have completely broken down

Stage 5 - 10–15 minutes till dinner (Don't put chicken in early, they will overcook)
