Chicken Old Delhi-Style Curry |

Method:
Stage 1 – First marinade (use blender and then put in big mixing bowl)
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1½ teaspoon salt
- 1½ teaspoon chilli powder
- Juice of ½ a lemon
- Chicken cut into quite big pieces. (leave skin – tastes yummy)
Stage 2 – Second marinade
- 100g Greek yoghurt
- ¼ teaspoon garam masala
Stage 3 – Place chicken on roasting tray at 140/160C for 12-15 mins
- When its cooked put chicken in bowl and save the juices
Stage 3 – for the sauce – Simmer the following:
- Halve the tomatoes and remove stork etc
- 1cm crushed ginger and 2 Garlic cloves(put through the blender)
- 2 Green Cardamoms, 2 Cloves and 1 Bay leaf
- 125ml water
Stage 4 – Once the tomatoes have completely broken down
- Puree in blender and then strain through a sieve into clean pan
Stage 5 - 10–15 minutes till dinner (Don't put chicken in early, they will overcook)
- Put Chicken in oven to warm-up
- Bring sauce to boil and add 1 TABLEspoon Chilli Powder.
- After sauce start to thicken
- Whisk in 50g butter in stages
- Add Chicken and Juices
- Simmer for 5 minutes
- Add 2½cm Ginger finely chopped and 5 TABLEspoons Cream
- Simmer till red spots of fat start to appear on surface
- Stir in 1 tsp salt, 2 tsp fenugreek and ¼ tsp garam masala
- Check seasoning and add sugar if necessary
