Chicken and Ham Pie

Ingredients:

  • 2 chicken breasts
  • 3 thick slices ham
  • 1 carrot (sliced)
  • 1 potato (peeled and chopped)
  • 1 tsp fresh thyme
  • 300ml chicken stock
  • 20g butter
  • 1 onion (finely chopped)
  • 20g plain flour
  • 100ml milk
  • juice of 1 lemon
  • 1tbsp parsley (chopped)
  • Puff pastry
  • 1 egg (beaten)

Method:

Heat the oven to 180°c

Put the chicken, carrot, potato, half the thyme and seasoning into a pan
Add 100ml of the stock and bring to the boil

Melt the butter and cook off the onions
Stir in the flour and add some stock to make a sauce
Add the milk and simmer for 2min
Remove from the heat and add the thyme, lemon juice and parsley

Add the rest of the ingredients to the sauce - ham and chicken mixture and leave to cool slightly

Transfer to a baking dish
Roll out the pastry and lay over the top, with a baking bird sticking out. Brush with egg and bake for 25-30min
