2 chicken breasts diced
1 can coconut milk
½ jar Thai red curry paste (170g jar)
1 green hilli finely diced with seeds
1” ginger sliced with peeler
2 shallots diced
Handful of sweet basil chopped
Zest of ½ lime
2tbsp brown sugar
2tbsp soy sauce
1tbsp fish sauce
Juice of ½ lime
Chilli oil to cook
