Ingredients:

For the Bird

2 shallots
Thyme
Rock salt

For the Pan

Shallots
½ bulb of garlic
Thyme
2 Bay leaves
Orange peel & juice
Sweet vinegar

Method:

  1. Remove the wishbone, then the legs, then the end of the duck (leave the wings on - they stop it rolling over)
  2. Cut up the bones and place to one side
  3. Score the skin and lightly season
  4. Stuff the duck with the two shallots, thyme and rock salt
  5. Add a little oil to a frying pan, render the duck for 5min on each side and 5min on top until its golden brown
  6. At the same time, brown the bones in the pan
  7. Add the shallots, garlic, bay leaves and thyme
  8. Put in the oven at 200°c for 15min, then let the duck rest for 10min
  9. Drain off the oil from the pan and put the bones back in again
  10. Add the zest and juice of the orange, and 2tbsp sweet vinegar and duck fat. Simmer and drain
  11. Remove the duck from the bone and carve into slices
