Method:
- Remove the wishbone, then the legs, then the end of the duck (leave the wings on - they stop it rolling over)
- Cut up the bones and place to one side
- Score the skin and lightly season
- Stuff the duck with the two shallots, thyme and rock salt
- Add a little oil to a frying pan, render the duck for 5min on each side and 5min on top until its golden brown
- At the same time, brown the bones in the pan
- Add the shallots, garlic, bay leaves and thyme
- Put in the oven at 200°c for 15min, then let the duck rest for 10min
- Drain off the oil from the pan and put the bones back in again
- Add the zest and juice of the orange, and 2tbsp sweet vinegar and duck fat. Simmer and drain
- Remove the duck from the bone and carve into slices
