Spinach crumble

Ingredients:

Crumble
2 slices wholemeal bread
1 garlic clove
1 tsp salt
1 tsp thyme leaves
¼ tsp rosemary (I just used mixed herbs for those two)
zest + juice of 1 lemon
1 tbsp olive oil
Spinach
Spinach
Butter

Method:

  1. Whiz together in a food processor or liquidiser-type thing. Scatter on baking tray and cook in hot oven until brown and a bit crisp, but not too much.
  2. Chop and cook the spinach in some butter.
  3. Put spinach into a dish, cover in grated parmesan, then the breadcrumby mix.
    Bake at 150 C for about 20 mins (or until it looks done!)
