White Wine and Basil Sauce for Fish

Ingredients:

2oz butter
2 shallots, finely chopped
glass dry white wine
¼ pt double cream
1 tsp cornflour mixed with water
handful of basil leaves chopped
lemon juice to taste
seasoning to taste

Method:

Melt the butter in a saucepan, add the shallots and cook for a few minutes until softened.

Add the wine, chopped basil leaves and black pepper. Boil until the liquid is reduced by half. Then put though blender until smooth.

Return to the sauce pan and add the cream and lemon juice. Mix cornflour with water to a smooth paste and then stir into sauce pan and cook until thickened.

Cook for 3-4 minutes until it is hot but not boiling.

Add lemon juice and seasoning.

Serve with fish.
