Ingredients:

4oz butter
2oz caster sugar
6oz plain flour

Method:

Heat the oven to 190°c
Beat the butter and sugar until smooth
Stir in the flour to get a smooth paste, turn out onto a floured work surface and roll until 1cm thick
Cut into rounds or fingers and place on a baking tray
Sprinkle with icing sugar and place in the fridge for 20min
Bake in the oven for 15 – 20min or until golden brown. Allow to cool on a wire rack
