Ingredients:

Makes around 300ml of sauce

Half bulb garlic cut horizontally
3 red chillies (mild) whole
1 red pepper halved and deseeded
1 medium onion skin on

200g Tinned Tomatoes
1tbsp brown sugar
1tbsp cider vinegar
½tbsp honey

Method:

Put all the vegs in a baking tray in the oven for 25min @ 200°C

Remove from oven, remove garlic and onion skins, roughly chop

Add butter to pan and stir in vegs

Add all the other ingredients and salt and pepper to taste

Smimmer, lid off, for 20minues.

Blend to a smooth paste and store in a glass jar.
