Pork chop with nduja and butter beans

Ingredients:

Pork chop
Salt & pepper
1 tbsp oil
1/2 a banana shallot (sliced)
1 tbsp nduja paste
1/3 (or so) of a can of butter beans, drained
1 tbsp sherry vinegar or red wine vinegar

Method:

Heat the grill to high
Season the pork chop on both sides with salt & pepper, plenty of salt on the fat, makes it taste way better
Pop under the grill for about 5min each side, depending on the thickness

In the meantime, heat the oil in a small saucepan and add the sliced shallot
When soft, add the nduja paste, vinegar and butter beans and swirl to coat
Keep warm on a medium to low heat

Rest the pork chop for half the total cooking time

Serve
