Squid with black pudding and borlotti beans

Ingredients:

Squid - 1 large or two small tubes
Flavourless oil, such as sunflower or groundnut
1/2 banana shallot, sliced
1 slice of black pudding
Stock or white wine (splash)
1/3 (or so) of a tin of borlotti beans, drained
Small amount of parsley, chopped
Togarashi (Japanese 7 spice seasoning)

Method:

Clean the squid and slice in half width ways so you have two big tubes

Heat a little oil in a saucepan and cook the shallot until soft
Add the black pudding and crumble to mix and combine
Add a splash of stock (preferable) or white wine
Add the borlotti beans and keep warm on the hob

Heat a frying pan and add some oil
Put the squid in the frying pan and with another pan press down so that it sears on one side for a couple of minutes
Turn the squid over and cook the other side for a minute or two

Stir the parsley into the black pudding & bean mixture

Serve with a sprinkling of togarashi over the top
