Hunters Chicken Thighs

Ingredients:

2 chicken thighs, boned and skinned

2 birds eye chillies (double up to heat things up

8 stripes of back bacon 

4 Raclette cheese slices

Fire of the Beast sauce

Method:

Place a chilli, split with seeds in the middle of the chicken thigh
Place 4 bacon stripes of bacon over lapping on a chopping baord
Roll up chicken and place in the middle of the bacon stripes
Wrap bacon over chicken one stripe at a time.

Heat oven to 180 degC

Place chicken into oven proof disk lined with baking foil
Cook for 25 minutes
Cover chicken with Fire of the Beast source
Lay the Raclette slices over the chicken
Cook for a further 10-15 minutes

Check chicken is cooked and then serve
